APAM balik is a simple yet delicious dessert that is commonly found in our local night market. Now imagine, taking this classic dessert and reimagining it into a cupcake. That’s exactly what Neelia Khoo of The Baking Firm has done.

Inspired by making a dessert with corn in it, Khoo set about making her apam balik cupcake. Her cupcake has a pandan cake as its base, rich buttercream topped with corn custard, salty peanuts and as a finishing touch is drizzled in gula melaka.
